Requirements

• Must hold BSc. degree in Hotel Management or a similar industry-related degree
• Minimum HACCP level 4. Must speak English fluently
• The Arabic language is desirable.
• Excellent numeric and computing skills
KEY TASKS are:   To acquire resources and coordinate efforts of team members in order to mobilize the project on time. To manage the operational areas in such a manner that guest satisfaction and budgeted profit margins are achieved and that a good company image is projected, thus ensuring continued growth and continuity. All done in line with the contract.  Must have a minimum of eight (8) years of documented experience in Food Service operation and administration in a managerial position of Institutional/Industrial Food Service, or Commercial Food Service. 

  1. You will understand and be capable of administering proper procurement of food/supplies,
    storage, production, service, sanitation, customer relations, & internal accounting controls.
    2. Must be able to demonstrate a full working knowledge of menu development, recipe controls,
    food production, and food production control sheets, cost allocation.
    3. To ensure that the company's objective relating to labour turnover is achieved or bettered.
    4. To ensure subordinates are totally conversant with and practising good industrial relations procedures.
    5. To ensure that subordinates are totally conversant with and implementing all company policies and procedures.
    6. To compile and agree on meaningful, achievable budgets through accurate research and application of in-depth knowledge of the industry.
    7. To ensure that complaints or problems are actioned without delay and that effective follow-up action takes place to avoid recurrence.
    8. To ensure that the client's and company's training objectives are achieved.
    9. Prepare annual budgets and submit financial/operational reports on time.
    10. Liaise with client/client representatives for suggestions/complaint/audits and inspections

Minimum person specification is:

• Diploma/Bachelor in business management/Food Technologies
• Studied and familiar with ISO certifications
• Food Safety Certification. HACCP/COSHH / FSMS preferred
• Speaks, writes and reads English fluently

Working closely with the Project Manager, key duties will be:

 Promoting quality achievement and performance improvement throughout the project.
 Setting QA compliance objectives and ensuring that targets are achieved.
 Conduct weekly meetings with QC Team members and assign targets / follow-up.
 Working with site staff to establish quality requirements from external suppliers.
 Ensuring compliance with client’s, national and international standards and legislation.
 Considering the application of environmental and health and safety standards.
 Review standard guidelines and establishing clearly defined objectives.
 Defining quality procedures in conjunction with Catering staff.
 Setting up and maintaining controls and documented procedures.
 Identifying relevant quality-related training needs and delivering training.
 Collecting and analyse performance data and charts against defined parameters.
 Supervising technical staff in carrying out tasks, checks, and control practices.
 Writing technical and management systems reports.
 Point of Contact for service provider & Department head.
 To plan, formulate, and agree with project management comprehensive quality procedures.
 Liaising with the client or his representatives for the proper execution of FSMS System.
 Ensuring the execution of corrective action and compliance with Contract.
 Establishing organization/departmental standards of service for customers or clients.
 Preparing clear explanatory documents such as customers' charters and organizational charts
 Monitoring performance by gathering relevant data and producing statistical reports.

Requirements

Manages the kitchen staff and directs meal preparation, according to a high standard. Accountable for all food service operations. Aside from overseeing the kitchen, it is the Executive Chef's responsibility to decide serving sizes, plan the menu and order foods and supplies. His role will include tasks as receiving shipments, conducting meetings and processing paperwork. Responsible for the preparation of certain entrees and other dishes that require the highest level of precision. 

Able to speak, understand, and read English fluently. Arabic Language is an advantage.
A Diploma in Hospitality Management preferred. HACCP/COSHH is a must
 Train The Trainer course will add to his role. First Aid Courses 

 Minimum of 6-8 years of experience in a similar position, preferable within a quality hotel.group

1. Train and manage kitchen personnel and monitor their roles.
2. Coordinate all related culinary activities.
3. Estimate food consumption and requisition or purchase food.
4. Select and develop recipes as per contractual requirements.
5. Standardize production recipes to ensure consistent quality.
6. Plan and price menus for various functions and meals.
7. Ensure proper and strict food safety and sanitation in kitchens
8. May cook selected items or for select occasions.
9. Responsible for hiring, discipline, performance reviews and initiating pay increases.
10. Ability to manage a multi-national kitchen brigade.
11. To plan and implement effective food promotion and theme nights.
12. To train and develop each Chef so that they are able to operate independently.

Strengths in Client customer care face to face, budgetary control & staff motivation of a multi-national workforce 

Effective management & control of all dept. Supervisors ensuring they report into your office daily

Be able to provide excellent work references from recent previous employers.
